Recipe for Mini Speculoos Cheesecakes (à la Lotus)

(Ingredients for 6 pieces – perfect for an intimate gathering!)

Ingredients for the base:

  • 100g spice cookies or Speculoos

  • 40g Only Hazelnut Paste 100% from Good Noot 🌰

Ingredients for the cheese mass:

  • 400g of natural cheese (e.g. cottage cheese, thick Philadelphia cheese or thick Greek yogurt)

  • 1 small egg

  • 20g of custard powder (e.g. vanilla or cream) without added sugar

  • 30g cane sugar

  • 1 teaspoon gingerbread spice (to enhance the Speculoos flavor!)

Decoration:

  • Only Hazelnut Paste 100% from Good Noot

  • Crushed Speculoos cookies

How to make it:

  1. Prepare the Speculoos base: Place the cookies in a food processor and blend until finely ground. Add the hazelnut paste to the crumbs and mix thoroughly until a mixture resembles wet sand. Smell the aroma! Caramel and nuts are magical.

  2. Line the cups: Prepare silicone muffin cups. Place a spoonful of cookie dough on the bottom of each cup and press firmly.

  3. Make the cheese filling: Place the natural cheese, egg, custard powder, cane sugar, and gingerbread spice in a bowl. Mix briefly (just until combined) to avoid air pockets (this will ensure perfectly even cheesecakes).

  4. Baking in a water bath: spread the cheese mixture on the prepared bases.

    • A trick for creaminess: Bake the cheesecakes in a double boiler – this gives them a velvety texture. Place the silicone molds on a deeper baking sheet and pour boiling water into the molds (up to about 1/3 of their height).

    • Place in an oven preheated to 160 C and bake for about 30 minutes .

  5. Cooling: After baking, turn off the oven, open the door, and leave the cheesecakes inside until completely cool. Then chill them in the refrigerator.

  6. The grand finale: Remove the cold cheesecakes from the molds and pour a generous amount of hazelnut paste (which goes perfectly with Lotus cookies) and sprinkle with crumbs.
