There's a flavor that's inextricably linked to autumn. Just a hint of cinnamon, ginger, and nutmeg in the air is enough to know that the coziest season of the year has arrived. I'm talking, of course, about the iconic "Pumpkin Spice Latte," which has taken the world by storm. But what if this flavor could be captured in a waffle—crispy on the outside and soft on the inside?
It's possible! And it's all thanks to our trusty nut lover, Marta (IG: extravegancja ) , who is an expert in creating plant-based and gluten-free wonders. Here's a recipe for pumpkin waffles that taste like the best spice cake and are incredibly easy to make. The whole thing is topped with a delicious, salty-sweet caramel sauce that will change your dessert forever.
The key to the perfect sauce? Pure peanut paste!
The secret to this amazing vegan caramel is its base. Instead of traditional ingredients, Marta used our 100% Peanut Spreads from Good Noot Why was this a hit?
Our paste is made with 100% carefully roasted peanuts, without any additives. The lack of added sugar and salt gives it a deep, authentic flavor. Combined with the sweetness of maple syrup and spices, it creates a sauce with the perfect balance—sweet, yet with a distinctive, nutty note that prevents it from being cloying. It's this purity of ingredients that gives this simple sauce a refined, artisanal character.

Ingredients:
-
For waffles (4-6 pieces):
-
250 g baked pumpkin puree (preferably Hokkaido)
-
180 ml of plant-based drink (e.g. oat or soy)
-
130 g rice flour
-
30 g chickpea flour
-
40 g corn flour or potato starch
-
2 tablespoons of cane sugar
-
1 tablespoon of our Peanoot Butter
-
1 teaspoon gluten-free baking powder
-
1/2 teaspoon cinnamon
-
-
For the nut caramel sauce:
-
100 ml maple syrup
-
50g 100% Good Noot Peanut Paste
-
30g melted coconut oil
-
1 teaspoon spice (for gingerbread)
-
a large pinch of salt
-
-
Additionally:
-
vegan whipped cream (e.g. coconut)
-
a handful of seasonal fruit (e.g. figs, plums, blackberries)
-
pecans or roasted peanuts
-
Preparation method:
-
Prepare the waffle batter: In a large bowl, combine all dry ingredients: flour, baking powder, sugar, and spices. In a separate bowl, combine the wet ingredients: pumpkin puree, plant-based drink, and nut paste (or oil). Mix the pumpkin mixture thoroughly, then pour it into the dry ingredients. Mix with a whisk until a smooth batter is achieved.
-
Bake the waffles: Preheat a waffle iron and lightly grease it with oil. Pour in spoonfuls of batter and cook the waffles for 5-10 minutes, until golden brown and crispy. Place the finished waffles on a wire rack to allow the steam to release and maintain their crispness.
-
Make the caramel sauce: Meanwhile, combine all the sauce ingredients (maple syrup, peanut butter, oil, spices, and salt) in a bowl. Blend until smooth. If the sauce is too thick, add a little more syrup or warm water.
-
Serve: Drizzle the warm waffles generously with nutty caramel sauce. Garnish with a dollop of vegan whipped cream, your favorite fruit, and chopped nuts. Serve immediately and savor the flavors of autumn!
