Carnival is a time for fun, and nothing lifts the spirits like a light, refreshing dessert that allows you to prolong this joyful period without spending long hours in the kitchen. Here's a recipe for cold cheesecakes with a walnut base and strawberry mousse – the perfect addition to any carnival celebration.

Carnival lightness with a nutty character

This dessert combines a fluffy cheesecake filling and fruity mousse with a uniquely aromatic base. Instead of traditional butter, we use our Peanut Butter from Good Noot for the base. Ingredients for the base:

  • 36 g sugar-free biscuits

  • 30 g of 100% Peanoot Butter from Good Noot

Ingredients for the mass:

  • 500 g of natural cheese or thick yogurt

  • 5 g gelatin

  • 50 g cold water

  • 20-30 g xylitol

Ingredients for strawberry mousse:

  • 250 g strawberries

  • 10 g xylitol

  • 3 g gelatin

  • 40 ml of cold water

Preparation method:

  1. Preparation of the base: blend the biscuits in a food processor until finely powdered, then thoroughly combine with the Peanoot Butter.

  2. Cheese filling: Pour cold water over the gelatin and set aside for a few minutes to swell. Then gently heat it (do not boil) until completely liquid. Mix the natural cheese or yogurt with the xylitol and the prepared liquid gelatin.

  3. Fruit puree: Chop the strawberries, place them in a saucepan, and add xylitol, or use frozen strawberries. Cook over low heat until the fruit softens. Blend until smooth. In a separate container, prepare the gelatin (pour water over it, wait for it to swell, and then add it to the hot fruit), stirring until completely dissolved.

  4. Assembling the dessert: Place a layer of hazelnuts on the bottom of each serving bowl or glass, pressing it in lightly. Then, spread the cheese mixture over the base and refrigerate the bowls until set. Once the mixture is firm, pour the strawberry mousse over the top and refrigerate the desserts again until the mousse is completely set.
