This vegan Japanese cheesecake with chocolate has an incredibly velvety texture that literally melts in your mouth, and it only takes a few minutes to prepare.
It's a perfect alternative to traditional baked goods – no baking and no dairy, yet with plenty of plant-based protein. By using silken tofu, we achieve a texture identical to desserts like no-bake yogurt cake, but with higher protein content and a deeper flavor.

The main star of this recipe is our Peanoot Butter Good Noot spread. While standard peanut butters can be heavy, our 100% peanuts give the mixture a refined, velvety texture. Combined with dark chocolate and crunchy cookies, this healthy cheesecake in a cup becomes a dessert you won't forget.
Recipe for Vegan Japanese Cheesecake (2 servings)
Ingredients:

1 package silken tofu

3 tablespoons Peanoot Butter from Good Noot

3–4 tablespoons maple syrup

30g dark chocolate (minimum 70% cocoa)

5g coconut oil

60g vegan cookies
Method:

Cheesecake mixture: Transfer silken tofu to a blender. Add Peanoot Butter and maple syrup. Blend on high speed until you get a perfectly smooth, aerated mixture.

Assembling the dessert: Pour the ready mixture into two cups or glasses.

Crunchy addition: Stick halves of vegan cookies into the mixture – they will add texture and perfectly break the creaminess of the tofu.

Chocolate topping: Melt dark chocolate in a double boiler with coconut oil. Stir until the topping is shiny and uniform.

Chilling: Pour chocolate over the desserts, creating a thin layer (shell). Place the cups in the refrigerator for at least 2 hours.

Done! After chilling, the chocolate should be crunchy, and the mixture underneath delicate and fluffy.
