Recipe for Apple Pie with Peanoot Butter

This recipe is quick and easy to make. Perfect for a quick dessert for unexpected guests or to brighten your day.

Ingredients for the dough:

  • 1/2 cup of wheat flour

  • 1/3 cup buttermilk (or kefir)

  • 1 egg

  • 1 tablespoon of erythritol or sugar

  • 1 heaping teaspoon of cinnamon

  • 2 firm, juicy apples

Ingredients for the topping:

  • 2 tablespoons of erythritol or sugar

  • 1 teaspoon of cinnamon

Additionally:

  • Frying oil (e.g. rapeseed)

Preparation method:

  1. Prepare the dough: In a bowl, thoroughly whisk together the flour, buttermilk, egg, erythritol/sugar, and cinnamon. Use a whisk to form a smooth, uniform dough with the consistency of heavy cream.

  2. Prepare the apples: Peel the apples. Cut them into quarters, remove the cores, and then cut each quarter in half again to obtain neat eighths.

  3. Prepare the topping: In a small bowl or on a deep plate, mix the erythritol/sugar with the cinnamon.

  4. Frying: Heat a generous amount of oil in a pan (the apples should be floating freely). Dip each apple slice thoroughly in the batter, allowing any excess to drip off.

  5. For golden brown: Place apples in hot oil and fry until golden brown on both sides (this will take 1-2 minutes per side).

  6. Coat with the cinnamon topping: Remove the cooked apples with a slotted spoon while they're still hot and place them on a paper towel to drain excess oil. Then immediately coat them in the prepared cinnamon topping.
