Recipe for Vegan Almond Cookies

This is a recipe like " mix and bake " Perfect for busy people!

Quantity: 16 pieces Preparation time: About 12 minutes of baking + optional chocolate icing.

Ingredients for cookies:

  • 1 1/4 cups almond flour

  • ½ cup Peanoot Butter Good Noot 🥜

  • ¼ cup maple syrup (or agave syrup)

Icing:

  • 40g dark chocolate (min. 70%)

  • 1 teaspoon coconut oil (adds shine)

  • 10g chopped peanuts for decoration

How to make it:

  1. Mixing: Place the almond flour, Peanut Butter, and maple syrup in a bowl. Mix thoroughly with a spoon or by hand until smooth.

  2. Resting: This is an important step! Let the mixture rest for about 2 minutes . The almond flour will absorb the moisture and the mixture will thicken slightly, making it easier to shape the cookies.

  3. Shaping: Form the mixture into 16 small balls in your hands. Place them on a baking sheet lined with parchment paper. Flatten each ball with your palm, then press down with a fork, creating a lattice pattern typical of American cookies.

  4. Baking: Place in an oven preheated to 180°C and bake for 10-12 minutes , until the edges are lightly browned.

    • Tip: The cookies will be soft when you remove them from the oven – this is normal! Let them cool completely on the baking sheet, then they will harden and become crisp.

  5. Chocolate Bath: Melt vegan chocolate with coconut oil in a double boiler or microwave. Dip cooled cookies halfway (or just the edges) in the chocolate.

  6. Decoration: Before the chocolate sets, sprinkle with chopped peanuts. Refrigerate the cookies briefly to allow the icing to set.
