Recipe for a single-serving Brookie

Prepare your favorite ramekin or small ovenproof dish and get started!

Ingredients for the base (Brownie):

  • 1 medium, ripe banana

  • 1 egg

  • 1 tablespoon of cocoa

  • 1 tablespoon of protein powder (e.g. vanilla or chocolate)

  • 1/2 teaspoon baking powder

  • 1/3 teaspoon vanilla extract

Ingredients for the topping (Cookie mass):

  • 1 heaping tablespoon of 100% Peanoot Butter from Good Noot

  • 1 teaspoon maple syrup

  • 1 flat tablespoon of coconut flour

  • 1 tablespoon of chocolate drops (preferably dark chocolate)

Preparation method:

  1. Preheat the oven: Preheat the oven to 180°C (convection) . Prepare a ramekin or small baking dish.

  2. Make the brownie batter: In a bowl, mash the banana with a fork until smooth. Add the egg, cocoa powder, protein powder, baking powder, and vanilla extract. Mix thoroughly with a whisk until smooth.

  3. Pour the base: Pour the prepared chocolate mass into the prepared ramekin.

  4. Make the cookie dough: In a separate, small bowl, whisk together our 100% Peanoot Butter , maple syrup, and coconut flour. The dough should be thick and compact.
