Recipe for vegan cheesecake Zebra a'la Monte

Prepare a baking tin with a diameter of 20-22 cm and prepare to delight your guests!

Ingredients:

  • For the bottom:

    • 200g vegan nut wafers

    • 60g melted vegetable butter

    • 30g hazelnuts

  • For the mass:

    • 800g thick plant-based yogurt (e.g. Greek soy yogurt)

    • 120g melted vegetable butter

    • 60g potato flour (or vanilla custard powder)

    • 25g coconut flour

    • 150g cane sugar

    • 2 tablespoons of vegan chocolate cream or cocoa

    • 2 heaped tablespoons of 100% Tylko Laskowy hazelnut paste from Good Noot

  • For decoration (optional):

    • vegan whipped cream (e.g. coconut)

    • fresh seasonal fruit

    • grated dark chocolate

    • crushed nut wafers

Preparation method:

  1. Prepare the base: Place all the base ingredients in a blender or food processor. Blend until you obtain a mixture with the consistency of wet sand. Line the bottom of a springform pan with baking paper, then pour in the mixture and press it firmly into the base, pressing it down with your fingers or the bottom of a glass. Refrigerate for at least an hour.

  2. Bake the base: After cooling, place the base in an oven preheated to 180°C and bake for 10-15 minutes , until the edges are lightly browned.

  3. Prepare the cheesecake filling: Meanwhile, combine all the ingredients for the filling, except the cocoa powder/chocolate spread, in a large bowl. Blend briefly until smooth.

  4. Divide the mixture: Set aside exactly half of the light mixture in a separate bowl. To the remaining mixture, add 2 tablespoons of cocoa powder or chocolate spread and mix again until combined.

  5. Create a zebra effect: Remove the pre-baked crust from the oven. Pour alternating 2-3 tablespoons of the light and dark batter into the center of the crust. Don't stir – the batters will spread on their own, creating a beautiful zebra pattern. Continue this process until both batters are used.

  6. Bake the cheesecake: Carefully place the cake in the oven and immediately reduce the temperature to 160°C . Bake for 45-50 minutes . The top should be set, but the center may still be slightly jiggly.

  7. Cooling is key! After baking, turn off the oven, open the door, and leave the cheesecake inside until it cools completely. Then, refrigerate for at least 4-6 hours, preferably overnight.

  8. Garnish and serve: Garnish the cooled cheesecake with whipped cream, fresh fruit, and grated chocolate as desired. Store in the refrigerator for up to 3-4 days.
