ONLY PISTACHIO – 100% pistachio paste made from roasted pistachios only
One ingredient, zero compromises. ONLY PISTACHIO is a 100% pistachio paste with nothing in it but roasted pistachios – no added sugar, salt, palm oil or emulsifiers. We roast and grind the pistachios ourselves until they turn into a smooth, velvety paste, then fill every jar by hand in our workshop in Kraków. Good Noot is the nutty sister of Good Lood, the Kraków ice cream parlour – so we know our pistachios inside out.

Pistachio paste – what exactly is it?
Pistachio paste (also called 100% pistachio paste) is simply ground pistachios. It is made in two steps. First the nuts are roasted to bring out a deep, slightly caramel aroma, then they are ground for a long time until they release their own oil and turn into a smooth, pourable mass. Nothing else needs to be added. Homemade pistachio paste takes a powerful blender and a lot of patience – ours just takes a spoon.
How is pistachio paste different from pistachio cream? A cream is a ready-made sweet spread: pistachios plus sugar, vegetable fat and often a pinch of salt. A paste is the nut itself – intense and less sweet, so you season it your way: sweet for baking or savoury for pesto and sauces. Our sweet cream is PISTACHIO, our 100% paste is ONLY PISTACHIO.
How to choose a good pistachio paste – what to look for on the label
The label tells you more than the photo on the jar. When choosing a pistachio paste, check:
- Pistachio content – in a 100% paste it is the only ingredient. If sugar, oil or milk powder are on the list, it is a cream or a blend.
- Added fats – palm oil or other vegetable fats are sometimes added to stop the paste from separating. A paste made only of pistachios doesn't need them.
- Colour – paste made from roasted pistachios has a natural, muted olive-green shade. If the colour is very bright, check the ingredients for colourings or flavourings.
- Sugar and salt – a 100% paste has neither in its ingredient list. Any sugars in the nutrition table are naturally occurring sugars from the nuts.
- Weight and price – pistachios are among the most expensive nuts, so a 100% pistachio paste always costs more than a cream in which pistachios are only part of the recipe. Compare the price per 100 g and the pistachio content.
