ONLY ALMOND – 100% almond paste made from roasted almonds only

One ingredient, no small print. ONLY ALMOND is a 100% almond paste: nothing but roasted almonds – no added sugar or salt, no palm oil and no emulsifiers. We roast the almonds until they turn golden and fragrant, then grind them until they release their own oil and become a smooth, creamy paste. Every jar is filled by hand in our workshop in Kraków. Good Noot is the nutty sister of Good Lood, the Kraków ice cream parlour – we know a thing or two about almonds in desserts.

Looking for a sweet ready-to-spread cream instead? Try our Almond Crunchy almond spread – 53% almonds with crunchy pieces in every spoonful.

Why Nootheads choose ONLY ALMOND

  • 100% roasted almonds – the ingredient list has exactly one item.
  • Source of protein – 27 g of protein per 100 g.
  • No added sugar and no added salt – just 4.7 g of naturally occurring sugars per 100 g.
  • Only 6.9 g of carbohydrate per 100 g – a good option if you count carbs (low carb).
  • Vegan and gluten-free, with no palm oil, emulsifiers or preservatives.
  • Handmade in Kraków – we roast, grind and fill the jars ourselves. Orders ship within 24 h.

Almond paste – what exactly is it?

Almond paste (also called roasted almond paste or 100% almond spread) is simply ground almonds and nothing else. Botanically, an almond is the seed of the almond tree's fruit, but in the kitchen we treat it like a nut. The longer almonds are ground, the more natural oil they release and the smoother and more pourable the paste becomes.

Watch out for naming mix-ups, because "almond paste" can mean different things:

  • 100% almond paste – nothing but ground almonds, barely sweet, for both sweet and savoury cooking. Just like ONLY ALMOND.
  • Almond spread – a ready, sweet spread in which almonds are combined with sugar and fat, e.g. Almond Crunchy.
  • Marzipan – almonds ground with a lot of sugar, used for decorating and filling bakes. Some recipes also call it "almond paste", but it is a completely different product.

How to choose a good almond paste – what to look for on the label

  • Almond content – in a 100% paste almonds are the only ingredient. If sugar, syrup, oil or salt are on the list, you are buying a spread or a blend.
  • Roasted or raw – roasted almonds give a deeper, nuttier flavour; raw almonds a milder, lighter one.
  • Skin-on or blanched – paste made from skin-on almonds is darker (often called brown almond paste) with a bolder taste, while paste from blanched almonds is pale and more delicate. Both are still 100% almond paste.
  • Oil on top – a good sign, not a flaw. A paste without emulsifiers or added fats naturally separates – just stir it.
  • Price per 100 g – compare the price per weight and the almond content, not the price per jar.

What is the difference between almond paste and almond spread?

Almond paste is nothing but ground almonds – ONLY ALMOND is 100% almonds. Almond spread is a ready, sweet spread in which almonds are combined with sugar and fat – our Almond Crunchy contains 53% almonds. The paste is less sweet and more versatile; the spread is ready for your toast straight away.

Is almond paste the same as marzipan?

No. Marzipan is almonds ground with a lot of sugar, sometimes with added flavouring. ONLY ALMOND is roasted almonds only, with no added sugar – you can sweeten it your way or use it in savoury dishes.

How many calories are in almond paste?

639 kcal per 100 g. A tablespoon (about 15 g) is about 96 kcal and a teaspoon (about 5 g) about 32 kcal. Portion values are calculated from the values per 100 g.

How much protein does almond paste contain?

27 g per 100 g, or about 4.1 g per tablespoon (15 g). ONLY ALMOND is a source of protein.

Does almond paste contain sugar? How many carbs does it have?

ONLY ALMOND has no added sugar – we add neither sugar nor sweeteners. It contains naturally occurring sugars: 4.7 g per 100 g. Carbohydrate is 6.9 g per 100 g, or about 1 g per tablespoon.

How does almond paste fit into a balanced diet?

We don't promise miracles – it is simply a paste made of almonds: 54 g of fat and 27 g of protein per 100 g, with no added sugar or salt. It is energy-dense (639 kcal per 100 g), so it is best enjoyed as part of a varied diet.

Can children eat almond paste?

ONLY ALMOND is just roasted almonds, with no added sugar or salt. Almonds, like other nuts, are a common allergen, though – decide together with your paediatrician when and in what form to introduce them into your child's diet.

Can I give almond paste to my dog?

ONLY ALMOND contains no xylitol and no added salt – its only ingredient is roasted almonds. Before giving it to your dog, check with your vet.

Why does oil collect on top of the paste?

It's natural almond oil. We don't add emulsifiers or other fats, so the oil may separate – just stir the paste before use. Store it in a dry, cool and dark place.

Where can I buy almond paste?

At goodnoot.com you buy straight from the maker – fresh jars from our Kraków workshop. We ship across Poland within 24 h, and delivery is free from PLN 99.
