Green spinach waffles with matcha and pistachio butter – a recipe for a healthy, spring breakfast

Spring is the perfect time to introduce fresh, green accents to your kitchen. These waffles combine the health benefits of spinach, the antioxidant power of matcha tea, and the refined taste of pistachios. They are not only visually appealing but also satisfying and nutritious. This is an excellent choice for a sweet and healthy breakfast or a light dessert that will surprise your household with its intense color. Pistachio finish with Good Noot

What gives these waffles their unique character are the luxurious additions. Here, we use our 100% pistachio paste from Good Noot. Its natural, deep flavor perfectly complements the earthy notes of matcha and the sweetness of fresh strawberries. Adding the paste to the batter makes the waffles more aromatic, and drizzling them with an extra portion of nut cream on top is a true feast for the palate.

Spinach Waffle Recipe with Matcha

Ingredients for the batter:

  • 90 g spelt flour

  • 60 g potato starch (or vanilla pudding powder)

  • 100 g fresh baby spinach

  • 150 ml plant-based drink

  • 30 ml olive oil

  • 1 tablespoon Tylko Pistacja pistachio paste from Good Noot

  • 2 teaspoons vanilla sugar

  • 1 teaspoon matcha tea (optional, to enhance color)

  • 1 teaspoon baking powder

  • Pinch of salt

Toppings:

  • 150 ml chilled plant-based cream 31% + 1 teaspoon powdered sugar

  • 2-4 tablespoons Tylko Pistacja Good Noot pistachio paste

  • Handful of fresh strawberries or other favorite fruits

  • 2 tablespoons chopped pistachios

  • Few fresh mint leaves

Method of preparation:

  1. Dry ingredients: In a large bowl, mix spelt flour, potato starch, baking powder, sugar, matcha, and salt.

  2. Green base: In a blender, combine fresh spinach, plant-based drink, olive oil, and a tablespoon of pistachio paste. Blend until perfectly smooth and intensely green.

  3. Combining: Pour the spinach mixture into the bowl with the dry ingredients. Mix everything thoroughly with a whisk or spoon until a smooth, lump-free consistency is achieved.

  4. Baking: Heat up the waffle maker and grease it with a thin layer of oil. Cook the waffles until they are crispy and lightly browned.

  5. Cooling: It's best to cool the finished waffles on a wire rack – this way they will release steam and remain crispy on the outside.

  6. Serving: Serve immediately spread with pistachio paste, with whipped plant-based cream, fresh strawberries, and mint leaves. Finally, sprinkle with chopped pistachios.
