Bake sweet rolls perfect for summer and beyond
These rolled pistachio-filled buns are a delicious alternative to the summer favorites, blueberry crumble buns (did you know that July 2nd was Blueberry Day?) – they're a great way to bake at home without added sugar. They're easy to make, and the results will surprise you with the fluffy texture and depth of pistachio flavor. We use our sugar-free Pistachio Cream from Good Noot here – 100% pistachios, no additives. This is what makes every bite a true nutty treat.
This recipe is perfect for a weekend breakfast, with coffee, for afternoon tea, or as a healthy alternative to store-bought yeast rolls. The addition of raspberries makes them even more fresh and light.

How to make pistachio cream buns – step by step
Step 1. Sift the flour into a large bowl, add the sugar, yeast, crumbled sweetener, egg, and slightly warm milk. Knead the dough by hand or in a food processor.
Step 2. Add soft butter and knead until the dough is elastic and no longer sticks to your hands.
Step 3. Cover the dough with a cloth and set aside in a warm place for at least an hour to rise.
Step 4. Roll out the risen dough into a rectangle. Spread the pistachio cream on one half and fold the dough in half.
Step 5. Cut the dough into 8 equal strips. Cut each strip twice lengthwise (not all the way through), then twist it into a spiral and shape it into a snail.
Step 6. Place the finished buns on a baking tray, cover and set aside for 20–30 minutes to rise again.
Step 7. Before baking, brush them with egg yolk beaten with milk.
Step 8. Bake at 175 degrees Celsius for about 20 minutes – until beautifully browned.
Step 9. Once baked, garnish each bun with an additional dollop of pistachio cream and fresh raspberries. They look great and taste even better!
