Tiramisu Raffaello with raspberries is a perfect combination of delicacy, creamy structure and nutty character with a light raspberry twist. And most importantly - it contains more protein, less sugar and is super easy to prepare!
Thanks to the Almond Crunchy cream from Good Noot, it is not only a healthier version of a no-bake dessert, but also a unique treat for fans of coconut, almonds and raspberries.
INGREDIENTS:
Cream:
2 vanilla protein puddings (total 400 g)
½ pack of mascarpone cheese (125 g)
30g Almond Crunchy Good Noot almond cream
2 tablespoons coconut flakes
1 egg white (from a previously boiled egg)
1 tablespoon erythritol
Raspberry layer:
200 g raspberries (fresh or frozen)
1 tablespoon lime juice
1 tablespoon erythritol
Sponge cakes:
16 long sponge cakes
milk for soaking
Icing:
40g white chocolate without added sugar
3g coconut oil
40 g natural yogurt
For decoration:

Preparation method:
Step 1. Prepare the cream: In a bowl, combine the protein puddings with mascarpone, Almond Crunchy cream and coconut flakes. Beat the egg white with erythritol until stiff and gently fold into the mixture.
Step 2. Make the raspberry layer: heat the raspberries in a saucepan with the lime juice and erythritol. Cook over low heat until they fall apart and thicken. Set aside to cool.
Step 3. Arrange the tiramisu: soak the ladyfingers in milk and arrange the first layer on the bottom of the dish. On top of that half of the cream, level it, put half of the raspberries. Repeat with the second layer of ladyfingers, cream and raspberries.
Step 4. Cooling: put the dessert in the fridge for a few hours, preferably overnight – the flavours will combine and the tiramisu will gain the perfect consistency.
Step 5. Glaze: Melt white chocolate with coconut oil, add yogurt and mix thoroughly. Glaze the top of the dessert – decorate as desired, you can do it like we did.
