Basque cheesecake is a dessert that doesn't require a perfect appearance – its charm lies in its cracks and dark, caramelized crust. In this recipe, the most important ingredient is Tylko Laskowy paste from Good Noot. It's 100% roasted hazelnuts, with no unnecessary additives. Combined with vanilla and creamy cheeses, this paste creates wonderful, nutty-caramel notes. This dessert will delight all your guests!

Basque Cheesecake with Hazelnut Recipe

Ingredients:

  • 375 g cream cheese (3 packages, e.g., Philadelphia type)

  • 250 g mascarpone cheese

  • 200 ml 30% cream

  • 200 g thick Greek yogurt (drained)

  • 4 tablespoons of Tylko Laskowy paste from Good Noot (you can also use pistachio or almond paste)

  • 6 eggs

  • Half a vanilla bean (or a teaspoon of good quality extract)

  • Approx. 120 g sweetener (erythritol, xylitol, or sugar)

  • Pinch of salt

Step-by-step preparation:

  1. Prepare the mixture: Place cream cheese and mascarpone in a bowl. Add 30% cream and whisk until smooth.

  2. Adding ingredients: Add sweetener, drained Greek yogurt, and vanilla to the mixture. While continuously mixing on medium speed, beat in eggs one by one.

  3. Nutty finale: Finally, add a pinch of salt and 4 tablespoons of Tylko Laskowy paste. Mix briefly until combined.

  4. Baking: Pour the ready mixture into a springform pan (approx. 20-22 cm diameter) lined with baking paper (the paper should extend clearly above the edges of the pan). Place in an oven preheated to 220°C (fan-forced) and bake for 35 minutes.

  5. Cooling: After removing from the oven, the cheesecake will gently "jiggle" (the so-called twerking cheesecake effect). Let it cool completely, then refrigerate for at least 8 hours for the mixture to set properly. It tastes best the next day!
