Viral Snowman Pralines. The sweetest holiday trend with almond paste!

Have you seen them on Instagram and TikTok? These adorable little white balls, which look like miniature snowmen, are winning the hearts of internet users! We have good news for you – making them at home is easier than you think. They're the perfect idea for kitchen fun with your kids or for creating a handmade, edible gift for loved ones.

But be warned! Our snowmen hide a secret. Instead of the traditional cream cheese or butter filling, their interior is filled with the exquisite flavor of almonds and cocoa.

The secret to a perfect interior? Only Almond Paste!

Recipe for Snowman Pralines

Get your toothpicks ready and your artistic side ready. Let's get started on winter crafting!

Ingredients (for approx. 6 snowmen / 12 balls):

  • 100g cocoa biscuits (the dark center contrasts beautifully with the white icing!)

  • 100g of 100% Almond Only Paste from Good Noot

  • Optional: 1-2 teaspoons of milk (only if the mixture is too dry)

  • 100g of good white chocolate

  • 5g coconut oil (or rapeseed oil) – will give the icing shine and fluidity

  • For decoration: Black sugar pen, orange food coloring (for the nose)

Preparation method:

  1. Make the base: Place the biscuits in a food processor and grind until finely ground. Transfer to a bowl, add the almond paste, and begin kneading (preferably by hand). The mixture should be wet and pliable, like modeling clay. If it crumbles, add a little milk.

  2. Form the balls: Form the mixture into 12 equal balls. Remember not to make them too large – they need to stay on the stick!

  3. Let's build a snowman: Gently stick two balls on a toothpick - one at the bottom (belly), the other at the top (head).

  4. Snow Bath: Melt white chocolate with coconut oil in a double boiler (place a bowl over steaming water) or in the microwave. The liquid chocolate should cool slightly but still be pourable. Dip the snowmen in the chocolate, covering them thoroughly (let any excess drip off).

    • Important: Leave a little white chocolate for making the noses!

  5. Cooling: Place the pralines in the refrigerator (preferably by sticking toothpicks, e.g. into an apple or a piece of Styrofoam, to keep them upright) until the chocolate hardens and becomes firm.

  6. Artistic finale:

    • Draw eyes, a smile, and buttons on the belly with a black marker.

    • Mix the remaining white chocolate with a little orange food coloring. Use a toothpick to draw a carrot nose.

Done! Your army of sweet snowmen is ready to munch. Enjoy!
