This no-bake Reese's-style cake is simple to make and bursting with the flavor of nuts, chocolate, and fresh raspberries. Perfect for anyone who loves classic Reese's but prefers a healthier, homemade, and vegan version of this iconic combination.
Recipe for a 25 cm diameter form
INGREDIENTS:
Bottom:
170 g shortbread cookies
60 g peanuts or hazelnuts
60 g coconut oil
30 g cane or coconut sugar
25 g dark cocoa
a pinch of salt
Nut cream:
200 g Peanoot Butter from Good Noot
120 ml of canned coconut milk
60 ml maple syrup
50 g coconut oil
Icing:
180 g dark chocolate
120 ml of canned coconut milk
30 g coconut oil
1 tablespoon maple syrup
Additionally:
200g fresh raspberries
vegan whipped cream (the author's recipe includes cocoa and cream fixer)
fresh mint leaves
2 tablespoons peanuts, for sprinkling
Preparation
Step 1. Blend all the ingredients for the base until they resemble wet sand. Transfer the mixture to a greased baking dish, smooth the surface with a spoon, and refrigerate.
Step 2. Blend the hazelnut cream ingredients until smooth and velvety, then spread over the chilled base. Return to the refrigerator.
Step 3. Prepare the icing by heating the coconut milk, chocolate, oil, and maple syrup until glossy. Spread the slightly cooled icing over the cream with a spoon. Refrigerate for 4–6 hours, preferably overnight.
Step 4. Before serving, garnish with vegan whipped cream, raspberries, mint leaves and sprinkle with nuts.
