INGREDIENTS (for 8 pieces):
1 pack of puff pastry (preferably rectangular)
250 g mascarpone cheese
100 g cream 30%
80g white chocolate
15 g Pistachio Good Noot cream (for filling)
15 g Pistachio cream for decoration
1 egg + a little milk (for greasing)
a handful of chopped pistachios
raspberries for decoration (we used freeze-dried)
Preparation method:
1. Preheat the oven to 200°C (top-bottom).
2. Heat the cream in a saucepan, add the broken white chocolate. Stir until completely dissolved, set aside to cool slightly.
3. Add mascarpone and 15 g pistachio cream. Mix until smooth, velvety.
4. Unroll the puff pastry, roll it up (like a Swiss roll) and cut into about 3 cm slices. Brush the whole thing evenly with beaten egg and milk.
5. Place the rolls on baking paper, brush with beaten egg and milk.
6. Bake for 15–20 minutes until golden and crisp.
8. Once cooled, fill them with the prepared cream and decorate with pistachio cream from a jar, chopped pistachios and freeze-dried raspberries.
