How to make homemade doughnuts?
Before we move on to the filling, it's worth taking care of a fluffy and delicate dough. Here's a simple recipe:
INGREDIENTS:
500 g flour type 550
7 egg yolks
25 g fresh yeast
230 ml milk
75g sugar
80g butter
2 tablespoons of vinegar
1 liter of rapeseed oil for frying

Preparation method:
1. Prepare the starter. Use yeast, a tablespoon of flour, about 30 ml of milk and set aside for 15 minutes.
2. In the meantime, beat the egg yolks with the remaining sugar until fluffy – this will make the doughnuts as soft as a cloud.
3. Then combine in one bowl: flour, starter, milk, vinegar (it will evaporate during frying) and fluffy mass of yolks and sugar. Knead the dough until the ingredients are combined, then add butter and knead again for up to 10 minutes. The dough will be quite sticky, but do not add flour, because then the doughnuts will become hard. Leave to rise in a warm place for about 2 hours - cover the bowl so that the dough does not dry out while rising.
4. Once the dough has risen, place it on the countertop, knead it for a while, then roll it out to a thickness of approx. 1.5-2 cm and cut out your preferred shapes.
5. Leave the cut doughnuts to rise, covered, for about 45 minutes. This portion makes 16 medium-sized doughnuts.
6. Fry in hot oil at 170-180 degrees, then the donuts will not burn on the outside and you will be sure that they are perfect inside.
Now it's time for the best part – the filling!
7. Fill the cooled doughnuts with your favorite Good Noot creams. We filled ours with Pistachio, Choconoot®️ and Hazelnoot Crunchy creams. You can also combine Good Noot creams with mascarpone, ricotta. And if you need a fruity twist on flavors - fill the doughnuts with nut cream and additional raspberry, rose, strawberry or other jam.
Good Noot's Best Nut Spreads for Donuts
Instead of traditional fillings, opt for Good Noot creams – full of nutty flavour and perfectly creamy or surprisingly crunchy (like Almond Crunchy and Hazelnoot Crunchy).
Here are our TOP 3 suggestions:
1. Pistachio Donuts with Pistachio Cream
Do you like the luxurious taste of pistachios? Our Pistachio Good Noot is the best choice! Its velvety texture makes it a perfect match for delicate doughnuts.
Pistachio cream Pistachio will also delight people who, on Tłusty Czwarte and not only then, are looking for vegan fillings for donuts. Take this suggestion into account if you intend to reach for a recipe for vegan donuts. This pistachio cream is also available in a version without added sugar.
Now it's a hit! You can use Pistachio pistachio cream to prepare the viral Dubai donut. If you don't have a long enough filling nozzle, fill the donuts with crispy kadaifi dough mixed with pistachio cream just before frying, at the donut forming stage, but be careful: the filling may become harder after cooling.
2. Hazelnut Crunchy Donuts with Hazelnut Cream
Do you love the taste of hazelnuts? Choose a crunchy hazelnut cream with pieces of these nuts Hazelnoot Crunchy . This is a great alternative to popular doughnuts - a fluffy doughnut full of an intensely nutty filling with pieces of hazelnuts - will surprise many doughnut lovers.
3. Choconoot® hazelnut and cocoa cream donuts
Year after year, more and more people reach for chocolate-filled doughnuts. This filling for doughnuts does not seem to be anything groundbreaking until we add that our Choconoot® cream is unlike any other.
What makes Choconoot® stand out from other available hazelnut and cocoa creams? It has a wonderful, velvety consistency, a deep taste, because we roast and grind the nuts that are in the cream ourselves. And above all, like all of our creams, it does not contain palm oil, artificial additives or preservatives and is available in a version without added sugar.
How to stuff doughnuts with cream?
1. Transfer the cream to a pastry bag fitted with a long tip (for the Hazelnoot Crunchy cream you will need a wider tip).
2. Pierce the doughnut on the side and gently fill it with the filling.
3. Sprinkle with powdered sugar or cover with icing – done!
