Recipe for Christmas pistachio tiramisu

(The perfect amount of ingredients for 5 desserts/cups)

Ingredients:

  • 2 egg yolks (eggs must be scalded with boiling water first!)

  • 2 tablespoons of powdered sugar

  • 250g mascarpone cheese (chilled)

  • 2 heaping tablespoons of Good Noot Only Pistachio Paste

  • 8 pieces of oblong sponge cakes (ladyfingers)

  • 1 cup of strong espresso (cooled)

  • 1.5 tablespoons chopped pistachios for decoration

Preparation method:

  1. Cream base: Place the egg yolks in a bowl with the powdered sugar. Beat with a mixer at high speed until light and fluffy (kogel-mogel).

  2. Add the cheese: add the mascarpone cheese in batches to the beaten egg yolks, mixing constantly at a slower speed, just until the ingredients are combined (be careful not to overbeat the mascarpone cheese, as it will curdle!).

  3. Pistachio Magic: Add 2 tablespoons of Pistachio Only Paste to a smooth cream. Blend briefly until the cream takes on a beautiful green color.

  4. Layers: Prepare 5 cups or glasses. Break the ladyfingers into smaller pieces and briefly (literally, just a second!) dip them in the cooled espresso.

  • Place a layer of soaked ladyfingers on the bottom.
  • Spread half of the pistachio cream.
  • Place another layer of biscuits.
  • Cover with the rest of the cream
  1. Decoration: Decorate the top of the desserts with dots of pistachio paste (you can use a pastry bag or a spoon) and chopped, crunchy pistachios.

  2. Chilling: This is the hardest part – refrigerate the tiramisu for at least 3 hours. The flavors need to meld and the cream needs to set.
