What's brilliant about Asian cuisine is its ability to perfectly balance flavors: sweet, salty, sour, and umami. In this recipe, the crunchiness of fresh vegetables meets flavorful teriyaki chicken and delicate rice noodles. It's a perfect alternative to boring salads – full of vitamins, colors, and a distinctive character.
The heart of the dish: PEANOOT BUTTER 100% Peanut Paste
What elevates this salad to a higher gastronomic level is its velvety sauce. We prepare it using our Good Noot's PEANOOT BUTTER 100% Peanut Paste. Made exclusively from perfectly roasted peanuts, without added sugar or palm oil, it gives the whole dish a deep, buttery aroma that perfectly complements lime juice and soy sauce.
Ingredients for Asian Salad (2 servings)
Crispy base and chicken:
-
200 g chicken breast
-
5 ml oil (e.g., rapeseed or coconut)
-
2-3 tbsp teriyaki sauce
-
100 g rice noodles
-
1 small red bell pepper
-
1 carrot
-
½ small red cabbage
-
½ cucumber
-
2-3 tbsp chopped spring onion
-
Handful of fresh mint or coriander (optional)
Amazing peanut sauce:
-
2 tbsp Good Noot's PEANOOT BUTTER 100% Peanut Paste
-
Soy sauce (to taste, approx. 1-2 tbsp)
-
Juice from ½ lime
-
1 tbsp maple syrup
-
2-3 tbsp warm water (to adjust consistency)
Step-by-step preparation:
-
Frying the chicken: Clean the chicken breast and cut it into neat cubes. Transfer to a bowl, mix thoroughly with teriyaki sauce and oil. Put it on a well-heated pan and fry until the meat is nicely browned and completely loses its raw appearance. Set aside to cool.
-
Preparing the noodles: Prepare the rice noodles according to the instructions on the package (usually it's enough to pour boiling water over them for a few minutes). Drain, rinse with cold water and cool.
-
Chopping the vegetables: Finely shred the red cabbage. Cut the red bell pepper, cucumber, and peeled carrot into thin, crispy strips (julienne).
-
Velvety sauce: In a bowl, combine PEANOOT BUTTER 100% Peanut Paste, soy sauce, lime juice, and maple syrup. Whisk vigorously, gradually adding 2-3 tablespoons of warm water until you get a smooth sauce that drips off the spoon with a uniform consistency.
-
Mixing and serving: In a large bowl, place the cooled rice noodles, fried chicken, and all the chopped vegetables. Add the chopped spring onion and fresh herbs (mint or coriander). Pour the prepared peanut sauce over everything and mix thoroughly so that the sauce coats every ingredient.
Enjoy! The salad tastes great immediately after preparation and after chilling in the refrigerator.
