Recipe for Mini Pistachio Basque Cheesecake
Ingredients (all at room temperature!):

125 g cream cheese (light version)

1 egg (size M – approx. 50 g)

1.5 tablespoons ground erythritol or powdered sugar

15 g 100% PISTACHIO Paste ONLY PISTACHIO from Good Noot

6 g potato starch

Optional: a touch of green food coloring (to enhance the color)
Step-by-step preparation:

Smooth mixture: In a bowl, thoroughly mix the cream cheese with the egg, ground sweetener (or powdered sugar), and 100% PISTACHIO Paste ONLY PISTACHIO. Finally, sift in the potato starch and mix everything until a velvety, lump-free mixture is formed. If you want a more intense color, you can add a touch of green food coloring.

Shaping: Line a small ramekin or mini springform pan (approx. 9 cm in diameter) completely with baking paper (the paper should extend slightly above the edges). Pour the prepared cheese mixture into the mold.

Express baking: In an Air Fryer: Bake in a preheated device at 190°C for 8 minutes. In an Oven: Bake in a preheated oven at 210°C for 14 minutes.

Cooling: After baking, the cheesecake should be well browned on top and still slightly "liquid" in the very center. Leave it to cool completely, then refrigerate for at least 3 hours to set perfectly.
