Basque cheesecake has won the hearts of dessert lovers worldwide with its unique, velvety texture and characteristic caramelized crust. In this version, we're making a miniature rendition that you can quickly prepare in the oven or... in an Air Fryer! It's a great idea for a quick, exquisite dessert without added refined sugar, which you can make in just a dozen minutes.

The Green Heart of the Dessert: 100% PISTACHIO Paste ONLY PISTACHIO

The incredibly deep, noble flavor of this cheesecake is due to one key ingredient. We use our 100% PISTACHIO Paste ONLY PISTACHIO from Good Noot. These are pure, 100% roasted pistachios without any unnecessary additives, salt, or flavorings. It is this paste that gives the cheese mixture an ethereal, pistachio character and a beautiful, natural color.

Recipe for Mini Pistachio Basque Cheesecake

Ingredients (all at room temperature!):

  • 125 g cream cheese (light version)

  • 1 egg (size M – approx. 50 g)

  • 1.5 tablespoons ground erythritol or powdered sugar

  • 15 g 100% PISTACHIO Paste ONLY PISTACHIO from Good Noot

  • 6 g potato starch

  • Optional: a touch of green food coloring (to enhance the color)

Step-by-step preparation:

  1. Smooth mixture: In a bowl, thoroughly mix the cream cheese with the egg, ground sweetener (or powdered sugar), and 100% PISTACHIO Paste ONLY PISTACHIO. Finally, sift in the potato starch and mix everything until a velvety, lump-free mixture is formed. If you want a more intense color, you can add a touch of green food coloring.

  2. Shaping: Line a small ramekin or mini springform pan (approx. 9 cm in diameter) completely with baking paper (the paper should extend slightly above the edges). Pour the prepared cheese mixture into the mold.

  3. Express baking: In an Air Fryer: Bake in a preheated device at 190°C for 8 minutes. In an Oven: Bake in a preheated oven at 210°C for 14 minutes.

  4. Cooling: After baking, the cheesecake should be well browned on top and still slightly "liquid" in the very center. Leave it to cool completely, then refrigerate for at least 3 hours to set perfectly.
