This cheesecake, prepared by our nutmeg lover and dietitian, Anna Błaszak (IG: @dietana_anna_blaszak) , is the perfect option for summer parties.

This classic, fluffy filling with a distinct lemon note perfectly complements the summer atmosphere. It tastes best after a few hours in the refrigerator, when it becomes perfectly firm and cooling.

An exotic twist with Coconoot Crunchy

What makes this cheesecake unique is its coconut-almond finish. Once baked and completely cooled, spread the top with Good Noot's sugar-free Coconut Crunchy frosting. Recipe for Cheesecake with Coconut-Almond Cream

Ingredients:

  • 1 kg of cheese for cheesecake (good quality cottage cheese from a bucket)

  • 5 eggs

  • 1/2 cup sweetener (or more, to your preference)

  • 2 packages of vanilla custard powder

  • Juice from 1/2 lemon

  • Biscuits for the base

  • Coconot Crunchy Coconut and Almond Cream with No Added Sugar from Good Noot

  • Almond flakes for sprinkling

Preparation method:

  1. Prepare the eggs: Separate the egg whites from the yolks. Beat the egg whites with a mixer until stiff peaks form.

  2. Beating the base: beat the egg yolks with the sweetener until light and fluffy.

  3. To combine the mixture: add the custard powder, cheese, and lemon juice to the egg yolks. Mix until just combined.

  4. Adding the foam: Add the beaten egg whites to the cheese mixture and fold everything in very gently with a spoon. This will make the cheesecake as light as an August cloud.

  5. Baking: Line a baking pan with parchment paper and place a layer of biscuits on the bottom. Pour the cheese mixture into the pan. Bake for about 60 minutes at 180 degrees Celsius.

  6. Decoration: Once the cheesecake has cooled completely (it's best to chill it further), spread a generous layer of sugar-free Coconoot Crunchy cream on top and sprinkle with almond flakes.
